Steve’s Furious Smoked Brisket Chili

Stereotype Steve
This is a nicely balanced heat and flavorful chili to warm up your cold winter day or night. With the combination of dark chocolate, Surly Furious IPA and the Chipotle Chilies just brings it all together with the rest of the flavors. This is a beanless chili, but you could easily add beans if you prefer.

Ingredients

  • 2 lbs of cut smoked brisket Could substitute any other cut of beef if wanted
  • 3 cans of tomato paste Could substitute Tomato Sauce if you want a thinner chili
  • 2 cups of beef bone broth
  • 12 oz can of Surly Furious IPA Could use your favorite IPA
  • 2 oz of dark chocolate 87%+ cocoa preferably
  • 10 oz cans of diced tomatoes with green chilies
  • 7 oz can of chipotle chilies
  • 3 Tablespoons chili powder
  • 2 Tablespoon brown sugar I used a Keto brown sugar substitute
  • 3 teaspoons garlic powder
  • 3 teaspoons onion powder
  • 3 teaspoons ground cumin
  • 1 teaspoon ground mustard
  • 1 medium red onion

Instructions

  • Cut the brisket into bite size chunks
  • Dice the red onion
  • Dice chipotle chilies
  • Add all ingredients into crock pot and stir well
  • Let simmer for 8+ hours to get the flavors to meld together
  • Stir occasionally and add more water/beef broth as needed
  • Serve with sour cream and shredded cheddar cheese

Notes

Personally I let it rest in the fridge over night after simmering for 8+ hours to allow the flavors to continue to meld together. You wont be sorry if you allow it to settle down in the fridge. I personally feel that chili is always better after it has sit chilled for a day or so. You can also substitute Ground chuck or any other beef cut for your meat if you don’t have brisket laying around. But this is a great way to use left over brisket, who am I kidding is there ever left over brisket? lol
