Kale Coleslaw

This is a new twist to a great bbq or picnic dish, coleslaw. This is also Keto friendly so if you are trying to eat healthy this is a good recipe. It is very tangy and very good on top of pulled pork or as a side dish.



  • 1/3 cup Mayonnaise or Greek Yogurt
  • 1 tbs Spicy Mustard or Dijon Mustard
  • 2 tbs Coconut Vinegar or Apple Cider Vinegar
  • 1 tsp Salt
  • 1/3 tsp Ground Pepper to taste
  • 1/2 cup Cheddar Cheese
  • 4 tbs Bacon Grease
  • 1 bag Kale Slaw Mix



  • Melt Bacon Grease
  • Put all ingredients in a large bowl and mix well, except the Kale slaw mix and cheddar cheese.
  • Pour in Kale Slaw mix and stir well until it is evenly distributed.
  • Add cheddar cheese, stir well
  • Cover bowl and refrigerate for about 1 hr.
  • Serve


This is a very simple and yet delicious option to the traditional coleslaw without all of the sugar. This tastes great as a side and for those of you Carolina bbq fans this is a great topper for that pulled pork sandwich. You can substitute greek yogurt for the mayo if you want or you can use any other alternative that you use in place of mayo. You can also add a little lemon juice to this to add a little bit more bitterness to it if you wish, but I would do much more than a tsp or less.
